Low carb mince pies

You either like them or love them, but let’s be honest, they are not he healthiest treat for us. 

As I just can’t resist these little festive treats, I’ve made it my quest a couple of years back to find a healthier mince pie version. And here is my recipe for Low carb mince pies with a twist!

Not only are they delicious but also grain, gluten, sugar and dairy free. So no reason not to have them 😉

Ingredients

Ingredients for the pastry

  • 100 g ground almonds
  • 30 g coconut flour
  • 20 g Erythritol* (alcohol sugar)
  • 1 tsp cinnamon
  • 1 egg
  • 15 g melted coconut oil
  • 1 tbsp water

Ingredients for the filling

  • 250g mixed frozen berries
  • 1 tsp orange & lemon zest
  • 50g Erythritol* (alcohol sugar)
  • 1 tsp mixed spice (or cinnamon, if you don’t have mixed spice in the house)
  • 1 tbsp chia seeds
Method

Preheat oven to 180C and grease a muffin tin. ⁠

Combine all the pastry ingredients and add the beaten egg to it. Stir in well until it resembles breadcrumbs. Add the melted coconut oil (if not dairy free, you can also use butter) and keep combining the mixture, while slowly adding a tablespoon of water. Knead the dough by hand and roll into a ball. Leave in the fridge, wrapped in some cling film, until you have made the filling.

Add the mixed berries (frozen or thawed) to a pan together with the sugar and spices. Stir on a low heat for at least 5 minutes until the liquid starts to evaporate. Remove from the heat and add the chia seeds. Let the mixture cool down for at least 15 minutes.

Divide the pastry into 10 balls equal in size. Add 7 of them to the muffing tin case and press them down until they cover the bottom and up the sides. Bake in the oven for 5 minutes. Take them out and add a dollop of the berry mixture to each case. While they were in the oven, you roll out the remaining dough (equal to 3 balls) and cut out stars. Top the mince pies with the stars, add some egg wash (beaten egg and some water or milk) and put them back in the oven for another 10 minutes, until they are golden brown.

Take them out and let them cool down before enjoying with some custard or pouring cream.

You can store them in the fridge for up to 7 days, if they last that long.⁠

*If you don’t have Erithrytol (alcohol sugar) you can substitute with granulate sugar or honey but please bear in mind that the mince pies will have more sugar/carbohydrates which might affect your blood sugar levels.
