Black Bean Brownies

These are one of my favourite brownies and what makes them so special is the secret ingredient: black beans!

Not only are they delicious but also grain, gluten, sugar and dairy free. So no reason not to have them 😉

Ingredients
  • 400gr drained black beans⁠
  • 4 eggs⁠
  • 35gr coconut oil⁠
  • 1 tsp vanilla extract⁠
  • 100gr erythritol⁠*
  • 4-6 drops of stevia⁠ (can be omitted)
  • 45gr dark unsweetened cocoa powder⁠
  • 1/2 tsp gluten free baking powder⁠
  • sea salt⁠
  • 16 walnut halves⁠
Method

Preheat oven to 180C and grease and line a baking tin. ⁠

Add black beans, eggs, coconut oil, vanilla extract, erythritol, stevia, cocoa powder, baking powder and a pinch of sea salt to a food processor and mix until smooth.⁠

Pour the batter into the baking tin and arrange the walnut halves on top so you get 16 squares. ⁠

Bake for 25-30 minutes. Keep in the fridge for a week, if they last that long.⁠

*If you don’t have Erithrytol (alcohol sugar) you can substitute with granulate sugar or honey but please bear in mind that the brownies will have more sugar/carbohydrates which might affect your blood sugar levels.
